Something about being on a restrictive eating plan like the Ultimate Reset or the 21 Day Fix (BOTH programs I do often) that makes me want to make yummy, nutritious, baked goods. Something about masochism that I'm oddly attracted to. Kidding. Not that serious. But the bad bananas were pilling up and I know how much my little duder likes his BREAD!!
Last night I threw together a bunch of ingredients and it turned out surprising well. ACCORDING TO MY FAMILY, of course!! :)
Ok, I'll get right to it because for real, do you really care about my story when you have banana bread to make?? If you're like me you scroll right to the ingredients anyway!
You'll need:
Wet:
4-5 overly ripe bananas (mashed)
8 eggs room temp
1/2 cup coconut sugar ( I was originally gonna use honey when I remember I bought a coconut/cane sugar blend)
1/2 cup melted coconut oil
2 tsp pure vanilla extract
Dry:
1 cup coconut flour
1/2 cup tapioca flour
2 tsp cinnamon
1 tsp Himalayan salt
1 tsp baking soda
1 tsp baking powder
Optional:
chocolate chips
walnuts
or if you're like me....trail mix.
Simple.
Preheat oven to 350.
Mix wet ingredients with a spoon or hand mixer.
Whisk dry ingredients.
Add the wet ingredients to the dry ingredients.
Mix again until all the flour is wet. (Scrape the bottom!)
Fold in choc chips, nuts or.... I used a mixed nut, dried cranberry and chocolate chip trail
mix we had. (Soren loved it!)
Coat a loaf pan with coconut oil or almond oil.
I poured 3/4 the batter into the loaf pan. Filling it to about 2 inches from the top.
I baked it for 50 minutes. We didn't let it cool long before I was serving it up to my lil guy.
Oh and I put a dollop of orange marmalade on it!!!
